The Merchants (Shanghai flagship)
For our flagship stores, we always seek cultural landmarks & historic buildings that represent the city’s spirit. The Merchants Beijing is housed in a two-storey building in a historical landmark that was once a Mao-Era printing factory, next to t he ruins of the royal walls of the Forbidden City.
The Merchants Shanghai is housed in a historic three-story building that was once the literature department of Shanghai Film Group, where movie directors gathered and famous film scripts were written.
The Merchant Shanghai is a multi-conceptual store, that combines the best of The Merchants brand. It houses, M Natural, our casual dining bistro concept that focuses on natural cooking, using premium locally-sourced ingredients, cooking using raw natural materials and producing everything in house;
COFFEE
Our coffee is carefully sourced from small producers - where attention to detail plays an important role. Every bean is collected in the corret season, and is roasted locally to maintain freshness. We endeavour to provide a coffee that presents a true and delicate flavour. The nuances of the brew is our focus.
Using only the finest, locally sourced, natural ingredients, and made daily from scratch, we provide well-crafted products. All of our products are designed according to the “Slow & Naked” concept, where all breads are “slow” produced and naturally fermented to ensure better flavor and texture. All cakes and desserts are low in sugar and have no artificial coloring or sugar coating, which give them a very cool “naked” look from the inside out.
RESTAURANT
As the more causal concept of The Merchants, our restaurant focuses on natural cooking and wine.
We went back to basics of cooking: curing, smoking, fermenting, open fires, using only natural raw products. We ethically source our ingredients locally and work towards a low eco-footprint and improved sustainability.
